
So, despite being raised Catholic, I do not celebrate 'giving stuff up for Lent' (one of my very first posts on this very blog was on the subject of this matter - you can find it under 2008, March). However, that isn't going to stop me from celebrating Fat Tuesday, the day of indulgence beforehand. And my mom picked up a strawberry and whipped cream paczki (poonchkey) and an oreo cream paczki from a cute little corner bakery for me. MMM. I am not usually a sweets person, but this got the better of me. I may have been too quick to judge Lent - I may need to celebrate Fat Tuesday year round.

mmmh paczki, one of the things I miss most about living on the South Side...I live near a swedish bakery and they aren't throwing down the butter, fat, and sugar the same for Fat's. When i lived in Bridgeport, there was a place in particular that had the Fat Tuesday line wrapping around the corner and you could smell sugar and butter about a mile away.
I prepared for Fat Tuesday by making a Lemon Curd (translation the filling for a paczki).
Recipe: Lemon Curd
3 eggs
1 cup sugar
1/2 stick unsalted butter (melted)
1 cup lemon juice
grated lemon peel
* Beat eggs and sugar on low until well creamed. Add unsalted butter, lemon juice, and lemon peel.
*Cook on low heat, stirring constantly (or you'll get some weird egg thing) until thickened. Refrigerate and eat.
Alt: You can also cook in the microwave in minute allotments. (Just always stir after every minute for 5 minutes)
